CUCUMBER SALAD
• 1 medium cucumber, chopped
• 1 can of corn, drained
• 2 cups tomato, chopped
• 1 green bell pepper, chopped
• 1 red bell pepper, chopped
• 2 Tablespoons red wine vinegar or vinaigrette
• 1 Tablespoon red pepper flakes
• 1/2 teaspoon garlic
• 1/2 teaspoon cumin
• 1/4 teaspoon cilantro
• 1/4 teaspoon salt
• 1/8 teaspoon black pepper
Mix together. Toss to coat. Cover and refrigerate for at least 30 minutes,
before serving.
